2 cups
sugar
1 1/2 cups water
1 vanilla bean, split
1 1/2 teaspoons aniseed
2 oz. chopped candied pineapple (optional)
1/2 teaspoon banana extract
1-750 ml. bottle gin
2 drops yellow food color
In a small saucepan, combine sugar, water, vanilla
bean and aniseed. Bring to boiling. Boil hard for 5
minutes. Remove from heat. Stir in pineapple and
banana extract. Cool to room temperature. In a large
glass container, combine the sugar mixture and gin;
mix well. Stir in a few drops of food coloring.
Cover tightly. Store at least 2 weeks before
serving. Present as a gift in a decanter. Makes 5
cups. Strain before serving.
